Simple Apple Muffins

My family has gone apple picking annually for the last thirty years -it’s a family tradition that my parents started when they got married. Half the time it’s raining, lately one or more of my siblings is off at school 1,000 miles away but it’s always fun and we ALWAYS have more apples than we know what to do with. You would think that after so many years we would stop picking sooo many apples but apparently we haven’t figured that part out yet. So, we made a lot of apple sauce, pies, and muffins. This recipe is simple, quick and great for the end of the apple picking season. Enjoy!

Ingredients:

  • 1 1/2 cup all purpose flour (can substitute all purpose gluten free flour)
  • 3/4 cup sugar (can be raw, white, or brown sugar)
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/3 cup melted butter
  • 1 egg
  • 1 cup finely chopped apple (peeled)

Directions

  1. Heat oven to 375 degrees Fahrenheit
  2. Combine all ingredients in a mixing bowl & stir well
  3. Spoon batter into greased muffin pan
  4. Bake for 20-25 minutes or until light brown
  5. Let stand for 5 minutes
  6. Serve plain or with butter or cream cheese topping
